In the world of wine, Jorge Serôdio Borges is a name synonymous with excellence. Until 2004, he was the winemaker for Dirk van der Niepoort, a key figure in the northern Portuguese wine scene. His mentorship in the realms of old vines and aged wines paved the way for his famed creation, the “Five Generations Port,” from rare stocks dating back to 1890.

Whether at his estate, Wine & Soul, alongside his esteemed wife and winemaker, Sandra Tavares da Silva, or at the family-inherited Quinta da Manoella in the Pinhão Valley, or as co-owner and manager of Quinta do Passadouro, his wines are consistently noted for their character and quality—often compared to the best by the renowned magazine Winespectator. A Passion for Exceptional Wines
The pursuit of exceptional wines has always been the goal for the savvy winemaker from the Douro Valley, into which he pours all his passion. His family's long-standing tradition in winemaking and the ancient, 40-hectare vineyard, with over 100-year-old vines, serve as beneficial assets. Here, grapes are still stomped by foot in stone basins and aged in new barriques, resulting in elegant wines with aromas of chocolate, wood, cherries, blueberries, black currants, grapefruit, and elderflower—culminating in a strong fruity-spicy finish.
The Unique “Pintas” with Global Cult Status
An exciting project is the “Pintas,” developed together with his wife Sandra Tavares da Silva since 2001 near their Quinta da Manoella. They created a dense, mineral wine that ranks among Portugal's best and has garnered a cult following worldwide. The grapes come from five hectares of very old vineyards in a prime location in Cima Corgo, planted with nearly 30 different varieties. Meticulous selection and fully ripened grapes ensure the success of this wine, which ages 70% in new French barriques.
"Wine & Soul" – Jorge's Heartfelt Project
The success story of Pintas is closely linked to the founding of Wine & Soul, a heartfelt endeavor by Jorge Serôdio Borges and Sandra Tavares da Silva. Their mission is to produce character-driven wines of supreme quality. Their vineyards are located about 20 kilometers away from the hot Douro region, at elevations over 400 meters, where they also cultivate ancient olive trees, producing one of the finest olive oils in Portugal.
Great Red Wines from Quinta do Passadouro
Jorge's narrative doesn’t end there; he’s also the co-owner and manager of Quinta do Passadouro, owned by Belgian businessman Dieter Bohrmann. Known not only for its excellent Port wines but also for its grand red wines, the estate reserves grapes from the best vineyard sites for top-quality red wine production. The “PASSA” is recognized among the best wines in its price range in Portugal.
Three Talented Winemakers and Their M.O.B Wine Brand
Last but not least, Jorge Serôdio Borges established the M.O.B wine brand on the historic Quinta de Curojao near the Serra da Estrela in Dão with Douro winemakers Jorge Moreira and Francisco “Xito” Olazabal. M.O.B. represents the initials of these three distinguished winemakers who are regarded as some of Portugal's finest. Their joint project was born out of a shared love for the old wines of the Dão.
