The Catherine Marshall Riesling exemplifies the South African expression of the beloved Mosel style, influenced by the cool climate of the Elgin region. The aroma unfolds with delightful notes of zesty lime, crisp apples, and subtle hints of honey and beeswax. Its vibrant acidity is wonderfully balanced, harmonizing with a mouthwatering fruit sweetness on the palate, intricately supported by the wine's mineral texture. The hand-harvested grapes were sorted by hand upon arrival at the winery, pressed, and the must underwent a two-day resting phase. Subsequently, it was inoculated with selected yeasts and fermented at a cool 14˚C for 26 days. Prior to bottling, the wine was lightly refined and filtered.
