David & Nadia Aristargos is an exquisite white wine blend hailing from the emerging Swartland region of South Africa. This intricately crafted assemblage features a harmonious interplay of Chenin Blanc, Roussanne, Semillon, Clairette Blanche, Viognier, Verdelho, Marsanne, Colombar, Grenache Blanc, and Semillon, showcasing remarkable freshness and structure. The wine captivates with an aromatic profile of delicate citrus fruits, dried apples, pear, and a hint of white pepper, leading to an impressively long and lingering finish.
The grapes for this Swartland white blend were hand-picked and whole-bunch pressed, allowing the juice to settle cool before fermentation in barrels. Indigenous yeasts initiated the spontaneous fermentation, and malolactic fermentation completed in barrel, with the wine aging in older French oak with minimal sulfur addition.
