The Kershaw Clonal Selection Elgin Pinot Noir captivates the senses with alluring floral notes underscored by an extraordinary purity and freshness. Framed by finely powdery tannins and cushioned with a juicy texture, this esteemed wine delights with deliciously seductive flavors of black cherries, aromatic pomegranates, and hints of fragrant dark chocolate and toast. A true rarity from South Africa's cooler Elgin region, only 5,850 bottles of this premier Pinot Noir have been produced, each with its unique identification on the label.
The grapes for this exceptional Pinot Noir were hand-harvested early in the morning and carefully sorted in small baskets before undergoing destemming. The destemmed grapes were fermented as whole berries in small open fermenters after a 3 to 4-day soaking phase. Following 10-16 days of 'punch-downs' on the skins, the wine was transferred into barrels where malolactic fermentation took place. The wine was separated from the malolactic yeast and returned to the barrels for 11 months of maturation in artisanal barrels from Burgundy and the Rhône region, comprising 12% new oak and 88% second and third fill wood.
