The Lanzerac Sauvignon Blanc captivates with an exuberant bouquet of vibrant green Granny Smith apples and luscious white fruits such as Asian pears and white peaches. This harmonious combination unfolds on the palate, achieving a perfect balance between ripe fruit and crisp acidity. A refreshing mouthfeel of lemongrass intertwines with a subtle mineral undertone, beautifully rounded by a soft creaminess in the lengthy finish, a testament to its extended lees aging.
The grapes for the Lanzerac Sauvignon Blanc were handpicked in the early morning and meticulously sorted at the winery. Once crushed, the must was cooled to 13-15°C, then left on the skins for six hours before pressing. The gently pressed juice was filled into stainless steel tanks under a dry ice blanket to rest for 48 hours. The clear juice was then racked off the lees and inoculated with selected yeasts to initiate fermentation, which concluded in the tank after ten days at a controlled temperature of 12-14°C.
