The Opstal Chenin Blanc showcases a splendid harmony of lively freshness and aromatic depth. Enticing notes of ripe pear, pineapple, and zesty citrus are beautifully integrated with delicate spices, a hint of thyme, and a delightful yeast complexity. This exquisite Chenin, crafted from Opstal's finest grapes, exhibits remarkable terroir-driven minerality from its diverse vineyards.
Das Traubengut wurde komplett entrappt, gequetscht und nach acht Stunden auf der Haut abgepresst. Die spontane Fermentierung fand zu 75% in großen Fässern aus französischer Eiche sowie zu 25% in Tanks aus Edelstahl statt. Spontane Fermentierung bedeutet hier, dass für die Fermentierung keine kommerziellen Hefen zum Einsatz kamen. Lediglich die in der Umgebung und auf der Frucht natürlich vorkommende Hefe setzte die Gärung in Gang. Nach Abschluss der alkoholischen sowie malolaktischen Gärung reifte der Wein acht Monate lang sowohl im Fass als auch im Tank auf der Hefe, bevor die Weine verschnitten und auf die Flasche gefüllt wurden.
