The Opstal The Barber Semillon enchants the senses with a captivating bouquet of fresh lemon and lime aromas, intensified by hints of ripe nectarine and subtle notes of spicy fynbos. On the palate, it reveals a harmonious blend of citrus fruit, hay, and dried herbs, complemented by delicate lime, apricot, and beeswax. This exceptional wine showcases the influence of alluvial soils, ensuring remarkable freshness and a saline finish.
Following alcoholic and malolactic fermentation, the wine matured for ten months in 225L French oak barrels. The fermentation was spontaneous, utilizing naturally occurring yeast present in the environment and on the fruit, allowing this Semillon to develop into a truly terroir-driven wine.
