The Opstal The Barber Semillon enchants the senses with a captivating bouquet of fresh lemon and lime aromas, intensified by hints of ripe nectarine and subtle notes of spicy fynbos. On the palate, it reveals a harmonious blend of citrus fruit, hay, and dried herbs, complemented by delicate lime, apricot, and beeswax. This exceptional wine showcases the influence of alluvial soils, ensuring remarkable freshness and a saline finish.
Nach Abschluss der alkoholischen und malolaktischen Fermentierung reifte der Wein zehn Monate lang in 225 L Fässern aus französischer Eiche. Der Wein fermentierte spontan, d.h. dass für die Fermentierung keine kommerziellen Hefen zum Einsatz kamen. Lediglich die in der Umgebung und auf der Frucht natürlich vorkommende Hefe setzte die Gärung in Gang und so entwickelt sich dieser Semillon zu einem wahrhaft terroirgtriebenen Wein.
