The Paul Clüver Sauvignon Blanc shines with a brilliant clarity, showcasing a nose that harmoniously blends fresh passion fruit, delicate white blossoms, and a hint of gooseberry and currant. Subtle undertones of nettle, minerality, and a touch of salinity complete the aromatic profile. Die Lese fand nachts statt, um maximale Frische und Geschmack im Wein zu erhalten. Die Trauben wurden vorsichtig gepresst und vor der Gärungt mit unterschiedlichen Hefen versetzt. Regelmäßiges Aufrühren förderte die Fülle. Insgesamt verblieb der Wein vier Monate lang auf der Hefe. Der kleine Anteil von Sémillon (12%) fermentierte teils in Edelstahltanks sowie teilweise in dritt- sowie viertbefüllten Fässern aus französischer Eiche.
