Die Trauben für den Quinta Vale Dona Maria Douro Red stammen von den ältesten Anbaulagen des Weinguts, welche durchschnittlich 60 Jahre alt sind und ein weites Spektrum von mehr als 40 verschiedenen traditionellen Rebsorten abdeckt. Alle Trauben werden nach der Lese für ein bis drei Tage in den traditionellen “lagares” mit den Füßen gestampft bevor es dann sieben bis zehn Tage lang zur Fermentierung in unterschiedliche Fässer geht, wobei Temperaturen zwischen 22° to 27° C herrschen.
Danach wird der Wein zur malolaktischen Gärung in 225 l und 300 l Fässern aus neuer französischer Allier Eiche umgefüllt. Alle Weine werden dann mit großer Sorgfalt für 21 Monate in Barrique gereift (75 % neue und 25 % alte französische Eiche), wobei alle unterschiedlichen Gärungsprozesse komplett seperat gehalten werden, bis es dann einen Monat bevor Abfüllung in Flaschen zum Mischen der gewünschten Cuvée kommt.
