This wine results from meticulous craftsmanship by a winemaker deeply attuned to his land. Only a specific parcel from a large vineyard on Thelema produces those signature mint notes hinted at in its name. It is believed that the grape skins absorb the eucalyptol released by the eucalyptus trees growing nearby.
Nach der Lese wurde das Traubengut entrappt, handsortiert, gequetscht und in Stahltanks fermentiert. Zehn Tage lang wurde der Wein umgepumpt, die malolaktische Fermentierung fand im Holzfass statt. Nach Abschluss der malolaktischen Gärung reifte der Wein 18 Monate lang zu 40% in neuer französischer Eiche sowie zu 60% in älteren Eichenfässern.
