The grapes for this wine hail from Devon Valley and Polkadraai in Stellenbosch. The cooling sea breezes along the coast help preserve the natural acidity, while the warm climate of the region enriches the fruit aromas and fragrant nuances.
The Chenin Blanc and Chardonnay grapes were pressed whole and then fermented slowly and coolly in new and used oak barrels. The wine matured on its fine lees for six months to refine texture. An 18% portion of new oak contributed to the wine's richness and mouthfeel.
