“Pét-Nat,” short for Pétillant Naturel, is a traditional sparkling wine method where fermentation completes in the bottle without interruption. This natural carbonation results in an authentic reflection of fruit, terroir, and craftsmanship.
The Mirakel is a lovingly crafted Pétillant-naturel or “Pét-Nat,” an original form of bottle fermentation that predates the renowned Champagne method. Here, nature takes center stage with a single, uninterrupted fermentation starting in the barrel and finishing in the bottle—without added cultured yeasts or fining agents.
Crafted from 60% Chardonnay and 40% Pinot Noir, the grapes are sourced from organic vineyards in the cool, maritime Hemel-en-Aarde Ridge near Hermanus. Handpicked, they are pressed whole and sent directly to the barrel. Spontaneous fermentation kicks off, and at 17 g/L residual sugar, the young wine is bottled to complete fermentation, developing its fine natural effervescence.
