The Ataraxia Pinot Noir enchants with its luminous ruby hue, capturing light rather than absorbing it. The elegant bouquet unfolds with enticing aromas of ripe red cherries, fragrant pomegranates, and moist forest floor, accented by hints of delicate spices and new oak. On the palate, this wine is remarkably sensual and captivating, showcasing profound depth, splendid transparency, and exceptional focus, culminating in a silky-smooth tannin structure that lingers enticingly.
Handpicked grapes for the Ataraxia Pinot Noir were meticulously sorted, destemmed, and gently crushed. This was followed by a ten-day cold soak in open fermentation vessels, leading to a 22-day fermentation at a regulated 28°C. Post-fermentation, the wine was pressed into selected French oak barrels, with 22% new wood, and aged for a total of 11 months in French barriques.
