Treatment in the cellar

Trevor Strydom, co-owner of Audacia Wines, spearheaded the development of refined, neutral-tasting, and fully dissolvable tannins from indigenous rooibos and honeybush. Rich in antioxidants, these serve as a substitute for sulfur in winemaking. This new technology enhances fresh fruit characteristics and liberates delicate aromas often suppressed by added sulfites, ensuring enjoyment without associated allergens, irritations, or headaches.
