The Boschkloof Cabernet Sauvignon offers a classic profile with enticing aromas of cedarwood and pencil shavings. This wine showcases a deep, dark ruby color, transitioning almost to black, with nuances of ripe plums and a well-integrated oak spice. On the palate, it is full-bodied with a firm structure, balancing smoothness and freshness beautifully.
The grapes for the Boschkloof Cabernet Sauvignon come from a 24-year-old vineyard. Harvested at full ripeness, yielding 5 tons per hectare, the fermentation – partly spontaneous and partly with cultured yeasts – occurred at 26°C with two daily pump-overs. After alcoholic fermentation, the grapes spent 14 days on the skins. The aging took place over 14 months in 225-liter French oak barrels.
