Crafted by the esteemed Riandri Visser, this highly-acclaimed Sauvignon Blanc incorporates a touch of Sémillon (2%) from six distinct vineyard parcels on the Cape Point estate, resulting in an exceptionally taut, clear, and linear style. Its aromas are enriched by herbal fynbos vegetation and fresh sea air, harmoniously combined with impressive focus and subtle yeast weight.
The hand-harvested grapes were whole-bunch pressed, and the resulting juice was left to settle for twelve hours before fermentation in stainless steel tanks (97%) and barrel (3%) at temperatures between 16 – 20 °C. Following fermentation, the wine matured on its lees for eight months before blending with a splash of Sémillon (2%).
