Cultivated in a cool-climate bush vineyard nestled in the Polkadraai Hills, this wine is a testament to meticulous winemaking on decomposed granite soils.
Das Traubengut für diesen preisgekrönten Chenin Blanc fermentierte „spontan“ in sogenannten Beton-Eiern. Spontan vergoren bedeutet, dass die Fermentierung ohne den Zusatz kommerzieller Hefen in Gang gesetzt wurde. Ausschließlich „wilde“ Hefe, die in der natürlichen Umgebung und auf der Frucht vorhanden ist, leitete den Gärprozess ein. Reifte 12 Monate lang in Beton und weitere vier Monate im Edelstahltank.
