The Catherine Marshall Finite Elements Pinot Noir is a limited gem from the Fine Arts Collection, showcasing remarkable balance and depth. This quintessential "cool climate" wine exemplifies the mastery of traditional winemaking. On the nose, vibrant aromas of fresh cherries, cranberries, and pomegranate enchant the senses. As it evolves in the bottle, it reveals the classic earthy characteristics of Pinot Noir, with hints of truffle and forest floor, offering a complex tasting journey.
Das Traubengut wurde komplett entrappt und teilweise leicht angequetscht. Die Maische wurde anschließend einer viertägigen Kaltquellphase unterzogen, um eine maximale Extraktion von Farbe und Aromen zu gewährleisten. Die Fermentierung fand in offen Gärtanks unter Zugabe ausgewählter Hefen statt, wobei der Tresterhut täglich untergetaucht wurde. Nach Abschluss der Gärung ging es in die Korbpresse wo der Wein in ausgewählten französischen Barriques die malolaktische Fermentierung abschloss und weitere Monate reifen durfte.
