The Cederberg Five Generations Cabernet Sauvignon entices with its deep, velvety hue, revealing an opulent bouquet of black licorice, dark cherries, and ripe plums. Aromatic notes of cedar and pencil shavings highlight its refinement post-aging in French oak barrels. This wine showcases classic Cabernet from the cooler Cape climate at its finest—polished, with fine tannins and a long, lingering finish.

Treatment in the cellar

A premium wine from Cederberg's range, with only 6,700 bottles produced in 2021. The grapes were handpicked and cold-soaked for two days before inoculation. During fermentation, the cap was manually submerged every six hours to maximize color and flavor extraction, peaking at 27°C. Following fermentation, a further 14 to 18-day maceration occurred before pressing and transferring to 225-liter French oak barrels, where malolactic fermentation completed. The wine aged for 18 months, using 83% new oak and 17% once-filled barrels, with only 23 premium casks bottled.
