The Damascene Stellenbosch Cabernet Franc presents a vibrant bouquet of fresh fennel, blackberry, maraschino cherries, dried violets, graphite, and hints of sweet tobacco. A remarkably aromatic wine that conjures images of sun-drenched tomato bushes and campfires under the starlit sky. The dynamic and robust palate envelops a core of iodine, accented by nuances of red and black currants, pomegranate, and cranberries. This fresh fruit profile is accompanied by a lively acidity and a notably pure, meaty, and tactile tannin structure, unmasked by oak. The precise and lingering finish concludes with a pleasantly dry and balanced note.

Treatment in the cellar

The grapes were hand-harvested on March 17, 2022, at a ripeness of 24.9 °B.
After destemming, they were placed in tulip-shaped concrete fermenters, where whole berries underwent three days of cold maceration before fermentation commenced. To ensure optimal extraction, pumping over occurred up to three times daily, with fermentation temperatures reaching a maximum of 28 °C. Natural malolactic fermentation occurred during the 11-month aging in 1000-liter French oak barrels.
