The De Grendel Op die Berg Pinot Noir entices with its clear, bright garnet hue, revealing an alluring bouquet of red berry fruits complemented by subtle notes of morels. This wine opens elegantly with nuanced flavors of strawberries and cherries, leading into refined tannins, balanced freshness, and a lengthy finish. Medium-bodied, it unfolds on the palate with hints of licorice, floral perfume, spices, and earthy mushrooms. Best enjoyed slightly chilled, this Pinot Noir promises a captivating experience.
The hand-harvested grapes underwent a 30% destemming, with 70% fermented as whole clusters. Prior to fermentation, the must experienced a four-day cold soak, after which selected yeast cultures were introduced, and the fermenting must was pumped over twice daily. A gentle pressing followed in a traditional basket press, and the wine was transferred into new French oak barrels to complete malolactic fermentation before being moved into a mix of older barrels for 13 months of aging.
