The De Trafford Blueprint Syrah 2021 embodies the epitome of Stellenbosch craftsmanship. Handpicked grapes were destemmed and gently crushed (10% of whole bunches used) directly into open fermenters and spontaneously fermented with natural yeasts at a maximum of 30°C. The cap was hand-punched down 2-3 times daily over 16 days. The juice was pressed directly into barrels via basket press. Malolactic fermentation took place in wood, followed by 20 months of maturation in barrels, using no new oak. The wine was bottled by hand, unfiltered and unfined.
