The Avondale Jonty’s Ducks Pekin White BIO 2022 captivates the senses with an enchanting bouquet reminiscent of delicate honey. On the palate, it reveals vibrant flavors of zesty lime, grapefruit, tropical pineapple, and subtle quince. Das Traubengut wurde am ganzen Bund gepresst und über Nacht im Tank gelassen. Der Wein fermentierte spontan, d.h. lediglich die in der Umgebung und auf der Frucht natürliche vorkommende Hefe brachte die Gärung in Gang. Ein Teil des Weins fermentierte in bereits zuvor belegten 600 Liter Fässern aus Eiche. Sowohl der im Tank fermentierte, als auch der im Fass vergorene Anteil verbrachten beide nach Abschluss der Gärung unter regelmäßigem Aufrühren sechs bis neun Monate auf der Hefe.
