Treatment in the cellar

The grapes for the Spier Signature Pinotage were gently crushed, destemmed, and cooled. After a two-day cold soak, the juice was fermented at a controlled temperature of 24°C in stainless steel tanks. Following fermentation, 20% of the wine aged in French barriques for eight to ten months, while the remainder fermented in stainless steel tanks with the use of French oak chips.
