Post-harvest, the juice undergoes freezing at -20 °C for five months. It’s then thawed and fermented amidst Cape winter—resulting in a uniquely tropical Sauvignon Blanc not commonly found in South Africa.
The grapes are hand-harvested at night at 23ºB, crushed, and reductively destemmed. Following a three-hour skin contact, the juice is pressed and settled for 72 hours. The fermentation process is deliberately delayed by five months, initiated with the addition of CKS yeast, lasting two weeks at controlled temperatures between 14–16 °C before bottling.
