Treatment in the cellar

The Pinotage grapes are harvested from various optimal ripening sites in the Western Cape, destemmed, crushed, and vinified in stainless steel tanks. Fermentation occurs over a seven-day period, after which the tank is pressed and returns for malolactic fermentation. Upon completion, the wine is stabilized and stored until bottling.
