The Eagles' Nest Merlot captivates with its stunning hue of dark plum, releasing an expressive bouquet of red currants, black cherries, and dark chocolate, complemented by delicate hints of spices and fragrant vanilla. On the palate, this elegant Merlot delights with luscious notes of black and red berry fruits, enveloped by silky, supple tannins. Subtle accents of rosemary and olive tapenade impart a refreshing herbal quality. A discreet peppery nuance, paired with a touch of dark chocolate, perfectly rounds off this exquisite tasting experience, culminating in a long, lingering finish.
The grapes for this Merlot were handpicked, destemmed, and crushed in medium-sized open fermentation vessels. The fermentation process lasted nine days at a controlled temperature of 24-30°C. The wine matured in new oak barrels as well as in second and third fill barrels, where it also completed malolactic fermentation. After 18 months, the wine was racked into stainless steel tanks and blended. Prior to bottling, the wine was lightly filtered.
