In the classic Eikendal style, this Stellenbosch Cabernet Sauvignon Merlot blend is both refined and full-bodied. It boasts a vibrant aromatic profile dominated by ripe blackberries and blackcurrants. On the palate, the characteristic cassis alongside earthy notes from the Cabernet Sauvignon is distinctly present. Spicy and sweet French oak enhances the fruit, providing balance to the experience. The juicy, concentrated Merlot fruit is backed by a framework of fine-grained tannins, resulting in a remarkably smooth enjoyment!
Die Trauben wurden entrappt, von Hand sortiert und sanft in den Tank gepumpt um keine harten Tannine zu extrahieren.
Nach der Gärung hat der Wein eine zwei-wöchige verlängerte Mazeration für bessere Struktur, gefolgt von einer sanften Pressung und darauf eine malolaktische Gärung. Der Wein reifte dann 12 Monate lang in 300-L Eichenfässern, wobei 15 % neue Eiche verwendet wurde.
