Eikendal Classique is the pinnacle wine from Eikendal Vineyards, proudly representing the long-standing tradition of the Stellenbosch estate. This masterful blend primarily features Cabernet Sauvignon, supported by Merlot, Cabernet Franc, and Petit Verdot, creating a remarkable complexity. The nose is enveloped by intensely aromatic notes of blue and black fruits, intermingled with delicate spices and a distinct earthy, mineral character. Jede Rebsorte wurde separat gelesen und vinifiziert. Bevor der Gärungsprozess des Traubenguts in die Gänge geleitet wurde, wurde es einer langen und vor allem langsamen Kaltquellphase unterzogen. Der Gärungsprozess fand in kleinen Tanks aus Edelstahl statt. Nach Abschluss der Gärung reiften die unterschiedlichen Rebsorten separat 12 Monate lang in französischen 300 l - Eichenfässern und wurden anschließend mit großer Sorgfalt verschnitten und weitere sechs Monate zur Reifung in französische Barriques ( 20% Neuholz) gefüllt. Nach Abfüllung reifte der Wein noch weitere 18 Monate in der Flasche, bevor er zum fertigen Genuss herausgegeben wurde.
