The Eikendal Janina Chardonnay captivates with an intriguing bouquet of vibrant citrus fruits, fragrant orange blossoms, and honey, complemented by a subtle touch of stone fruit. On the palate, it reveals lovely notes of green apples, golden honey, and aromatic lemon, perfectly balanced by a stony mineral finish that lingers delightfully.
Nach der Weinlese wurden die Trauben auf 5˚C runtergekühlt, bevor es dann in die Kellerei ging. Dort wurden sie am ganzen Bund gepresst, um so den klarsten und pursten Saft zu erhalten. Der Saft wurde über Nacht ruhen gelassen, um den Saft vom Sediment zu trennen. Die Fermentierung fand zwischen vier bis sechs Wochen bei geregelten 15˚C-18˚C in eiförmigen 900 Liter Plastik-Tanks sowie später in Edelstahl-Tanks auf 100 % natürliche Art und Weise statt. Danach reifte der Chardonnay weitere sechs Monate auf der Hefe.
