The Ernie Els Signature 2021 showcases a deep ruby hue that entices the eye. On the palate, the wine reveals a rich tapestry of dark, ripe fruit accented by hints of cinnamon and other exotic spices. A harmonious blend of cassis and cherries intertwines with notes of cocoa dust, vanilla, and luscious plums, evoking the essence of a decadent Christmas cake. Subtle secondary aromas of thyme and tobacco emerge alongside delicate elements of Fynbos. This masterpiece features perfectly rounded tannins, delivering a velvety mouthfeel that is both powerful and elegantly structured.

Crafted from grapes sourced exclusively from Ernie Els Wines, nestled on the warm northern slopes of the Helderberg region within the Stellenbosch appellation, this wine exhibits a full-bodied character, with skillfully integrated fruit tannins that culminate in a long, sumptuous finish.

Treatment in the cellar

The grapes were harvested early in the morning, meticulously sorted, and destemmed. Fermentation took place in open stainless steel fermenters, followed by 18 months of maturation in French oak barrels (50% new). A small portion (15%) aged for eight months in terracotta amphorae.
