Showing a delicate straw hue with vibrant green reflections, the False Bay On Borrowed Time Chardonnay offers an alluring bouquet of sweet clover, Golden Delicious apple, passion fruit, and verbenas. On the palate, it exudes richness and well-defined structure, enhanced by a lively, integrated acidity. This wine captivates with its lush mouthfeel and freshness that carries through its well-rounded finish. The low-yield Chardonnay vines cling tenaciously to the steep slopes of Helderberg, overlooking False Bay, creating a unique expression of terroir!
The approach here is both natural and meticulous, requiring significant labor. Hand-harvested and carefully selected, the grapes are gently pressed whole in a horizontal basket press to yield the purest juice. Fermented with wild yeasts in a single 600-liter French oak barrel, supplemented by one second-fill barrel and a single third-fill 225-liter barrique. Bottled without fining and with minimal filtration, only the lightest SO2 added. A total of 1600 bottles were produced.
