Treatment in the cellar

The grapes for this splendid Merlot were destemmed and fermented spontaneously with wild yeast in wood. Gentle 'punch-downs' were performed twice daily. After fermentation, the wine spent 30 days on the skins to facilitate tannin integration and maximize color extraction. It aged for nine months in third- and fourth-fill French oak barrels.
