The grapes for the Flagstone Dark Horse Shiraz were meticulously hand-picked, cooled overnight upon arrival at the winery. Following a controlled cold maceration phase lasting four to five days at 6-10°C, the wine was fermented in open steel tanks at regulated temperatures of 25-30°C. After fermentation, it aged for 14 months, with two-thirds in American oak barrels and the remainder in older French oak barrels.
This wine is produced without animal products, utilizing plant-based proteins instead, preserving its character while enhancing its vegan-friendly profile.
