Das Traubengut für den Flagstone Dark Horse Shiraz wurde mit großer Sorgfalt handgelesen und bei Ankunft in der Kellerei zunächst über Nacht im Kühlraum runtergekühlt. Bei einer geregelten Temperatur von 6-10°C folgte eine vier- bis fünftägige Kaltquellphase auf der Haut, woraufhin der Wein in offenen Stahltanks bei geregelten 25-30°C fermentierte. Nach Abschluss der Gärung reifte der Wein 14 Monate lang zu zwei Dritteln in Fässern aus amerikanischer Eiche und der restliche Anteil in älteren Fässern aus französischer Eiche.
Bei der Herstellung dieses Weins werden keine tierischen Produkte verwendet, sondern stattdessen pflanzliche Proteine. Interessanterweise behält er seinen Status bei, ohne seinen Charakter zu beeinträchtigen, und wird deshalb durch das veganfreundliche Verfahren aufgewertet.
