Displaying a radiant ruby hue, the Franschhoek Cellar Merlot exudes delightful notes of ripe plums and black cherries, complemented by subtle hints of herbal tea, fragrant licorice, and elegant oak spice. Its velvety and juicy palate is enlivened by luscious flavors of summer berries, leading to a smoothly lingering and pleasantly dry finish with echoes of succulent sour cherries.
The grapes underwent a 24-hour cold soaking phase, followed by temperature-controlled fermentation with selected yeasts and regular pump-overs. After alcohol fermentation, the wine matured on French oak staves for eight to twelve months before the barrels were blended and stabilized for bottling.
