Ghost Corner Wild Ferment Sauvignon Blanc showcases a pale straw hue accompanied by a vibrant bouquet of lime zest and winter melon. The palate is multifaceted and structured, revealing flavors of ripe pear, nectarine, and a hint of stone fruit, seaweed, and damp coastal fynbos. The wild fermentation introduces a creamy depth and spicy complexity, harmonizing herbaceous freshness with lush fruit and a serious, structured core. This is a bold and distinct interpretation of Sauvignon Blanc from the windswept Agulhas Coast.
Die Trauben werden am frühen Morgen von Hand geerntet und ein Teil davon wird als ganze Trauben gepresst; der Rest wird entrappt und für den Hautkontakt zerkleinert. Nach einem Tag der Absetzung wird der Saft in 400-Liter-Fässer aus französischer Eiche umgefüllt, wo die natürliche Gärung 40 bis 60 Tage lang bei 13 °C stattfindet. Nach Abschluss der Gärung reift der Wein bis zu zehn Monate lang in den Fässern, wobei monatlich eine Bâtonnage der Hefe durchgeführt wird. Es findet keine malolaktische Gärung statt.
