Ghost Corner Wild Ferment Sauvignon Blanc showcases a pale straw hue accompanied by a vibrant bouquet of lime zest and winter melon. The palate is multifaceted and structured, revealing flavors of ripe pear, nectarine, and a hint of stone fruit, seaweed, and damp coastal fynbos. The wild fermentation introduces a creamy depth and spicy complexity, harmonizing herbaceous freshness with lush fruit and a serious, structured core. This is a bold and distinct interpretation of Sauvignon Blanc from the windswept Agulhas Coast.

Treatment in the cellar

The grapes are hand-harvested in the early morning, with a portion pressed whole, while the rest is destemmed and crushed for skin contact. After a day of settling, the juice is transferred to 400-liter French oak barrels, where natural fermentation occurs for 40 to 60 days at 13 °C. Post-fermentation, the wine ages in barrels for up to ten months, with monthly bâtonnage, and no malolactic fermentation takes place.
