Die Trauben wurden schonend gequetscht und entrappt, anschließend in einem offenen Gärbehälter vergoren. Während der Gärung erfolgten nur zwei behutsame Umpumpvorgänge pro Tag, um die Frische zu bewahren. Nach dem Pressen reifte der Wein neun Monate lang in 225-Liter-Fässern aus älterer französischer Eiche, was ihm Tiefe und Struktur verleiht.
