Holden Manz Vernissage 2021 is a captivating deep red wine with a delicate crimson rim. The bouquet presents a harmonious blend of varietals, with Cabernet Sauvignon (27%) offering enticing notes of cassis and dark berries. Shiraz (36%) contributes cherry nuances and a hint of fresh spices, while Merlot (37%) showcases robust aromas of ripe plum. On the palate, these flavors meld seamlessly, supported by velvety tannins and a refined equilibrium between acidity and sweetness. The intense layers of fine spices, tobacco, and cassis create a memorable experience, culminating in a smooth, lingering finish.
Das Traubengut wurde handgelesen, entrappt, sortiert und vorsichtig angequetscht. Gleich im Anschluss fand die Fermentation statt, man griff nur minimal in den Prozess ein, um den Wein so naturbelassen wie möglich zu vinifizieren. Nach Abschluss der Gärung reifte der Wein zehn Monate lang in zuvor belegten Fässern aus französischer Eiche.
