With a delicate straw hue, the Idiom Bianco di Stellenbosch captivates with its enchanting bouquet of aromatic lime zest. The palate is elegantly crafted, revealing delightful notes of green melon, pear, citrus peel, and stone fruit. This incredibly fresh wine boasts remarkable structure and balance, showcasing a stellar example of South African Pinot Grigio that embodies both finesse and vibrancy.
The grapes for this Pinot Grigio were stored overnight in a cooling chamber before being destemmed and crushed for pressing. The first press juice was kept separate from the subsequent juice. After a three-day resting period at 11-14°C, the juice was inoculated with a carefully selected yeast culture. Fermentation occurred at a constant 14°C and lasted around three weeks. Prior to bottling, the wine was lightly refined and filtered.
