A mineral-driven Chardonnay that captivates with its nuanced nutty, rocky, and zesty citrus intensity, the Iona Elgin Highlands Chardonnay showcases a thrilling and linear structure. This exquisite offering is crafted for those who appreciate Old World Chardonnays. The purity of the fruit is harmoniously integrated with well-balanced oak and vibrant, fresh acidity, resulting in a wine that is multi-faceted and complex, culminating in a long, elegant finish.
Die Trauben wurden von Hand geerntet, bevor sie am Bund gepresst wurden. Es wurden keine Absetzenzyme verwendet, wodurch der Saft mehr Feststoffe enthielt. Dieser Wein wurde zu 100 % wild in einer Auswahl von 300 l und 228 l Fässern aus französischer Eiche vergoren (20 % neu, der Rest in Fässern der zweiten, dritten und vierten Füllung). Der Wein blieb insgesamt 11 Monate auf der Hefe, wobei 10 % eine malolaktische Gärung durchliefen, um ihm Fülle und Textur zu verleihen.
