The Iona Elgin Highlands Pinot Noir captivates with an enchanting bouquet of rose petals, black and red cherries, strawberries, and subtle spice accents. On the palate, it reveals a juicy, complex character elegantly textured, with a lingering savory spice finish. Lively acidity and finely structured, chalky tannins impart strength and remarkable aging potential. A classic, precise Pinot Noir of outstanding finesse and depth.
The grapes were hand-harvested into small boxes and stored overnight in a cooling chamber. A careful hand selection was made prior to destemming, which occurred without crushing. Subsequently, the berries were cold macerated for 5-7 days before natural fermentation commenced in open fermentation vessels. During fermentation, which took place at a maximum temperature of 28°C, gentle punchdowns or pump-overs were performed by hand as needed.
The wine was then transferred into 500L and 300L French oak barrels, where malolactic fermentation took place (20% new wood, the remainder in second, third, and fourth fill). Aging on the lees lasted for 12 months. Subsequently, the wine was racked from the barrels and blended in stainless steel tanks. Before bottling, the wine clarified naturally over two months.
