The Iona Sauvignon captivates with its vibrant freshness, showcasing zesty grapefruit, refreshing lime, and ripe gooseberries, complemented by exotic tropical fruits and delicate floral, grassy herbal nuances. The finish delights with enticing notes of white pear candy. This remarkable 'cool climate' Sauvignon Blanc exhibits a lively mineral backbone, elegant profile, and well-balanced character. Its long-lasting, complex, and dry finish tantalizes the palate.
Following harvest, the perfectly ripe grapes were fermented at controlled cool temperatures in stainless steel tanks. During fermentation, the yeast underwent regular stirring (batonnage), imparting excellent structure and fullness to the wine. Upon completion of fermentation, the Sauvignon Blanc was blended with 4% oak-aged Semillon to achieve a finely rounded balance.
