The Iona Elgin Highlands Wild Ferment Sauvignon Blanc is a sophisticated and intricate expression of the renowned Iona Sauvignon Blanc. This Fumé-style white wine is fermented with wild yeasts in aged oak barrels, revealing remarkable depth and finesse. It showcases a vibrant profile marked by a touch of bitterness, a spicy, yeast-driven structure, and layers of aromatic spices, delicate seaweed, and pink grapefruit, all intertwined with a hint of salinity on the finish. The meticulously crafted Sauvignon Blanc unfolds multidimensionally: mineral, salty nuances are complemented by hints of black currants and white stone fruits. On the palate, it displays a rich texture that culminates in a long, vibrant finish. This dry vintage harmonizes lush fruit with gently integrated natural acidity, crafting a captivating bouquet.
Die Trauben wurden von Hand gelesen und am ganzen Bund gepresst. Der Saft wurde 12 Stunden lang geklärt, bevor er in 500-Liter-Fässer aus französischer Eiche (Zweit- bis Viertbelegung) umgefüllt wurde. Die Gärung begann spontan, und die Temperatur wurde zwischen 18-22°C gehalten. Der Wein reifte 11 Monate im Fass, bevor er in Edelstahltanks umgefüllt und verschnitten wurde. Anschließend lagerte der Wein weitere drei Monate im Tank, wurde natürlich geklärt und stabilisiert sowie leicht gefiltert, bevor er abgefüllt wurde.
