The Iona One Man Band showcases the cool, peppery spices typical of its climate, harmoniously integrated with robust tannins and layers of blackberries and dark cherries. This remarkable blend is anchored by Petit Verdot, complemented by 53% Syrah, Nebbiolo, Mourvèdre, and a hint of Viognier. Fresh mint and herbal notes intertwine with stony aromas, evoking the scents of Fynbos and fennel. On the palate, a seamless composition of mint, raspberry, plum, and black cherry unfolds, accented by firm tannins that impart depth and structure.
Die Rotweinvinifikation erfolgte auf sehr traditionelle Weise. Nach der Handlese wurden die Trauben entrappt und auf einem Vibrationstisch sortiert, ohne dass sie gequetscht wurden. Nachdem die wilde Gärung begonnen hatte, wurde der Tresterhut zweimal täglich sanft untergestoßen, um die gewünschte Extraktion zu erreichen.
Nach der Gärung erfolgte eine verlängerte Mazeration; die Weine wurden regelmäßig probiert, um den Extraktionsgrad zu bewerten und den richtigen Zeitpunkt zum Pressen zu bestimmen. Nach dem Abpressen durchliefen die Weine eine spontane malolaktische Gärung im Fass, wo sie 12-16 Monate in 500-Liter-Fässern aus französischer Eiche reiften, wobei 25 % der Fässer neu waren.
