The Iona Solace Syrah captivates with layered aromas of blackberries, red fruits, and spicy pepper. On the palate, it showcases energy paired with elegance, marked by pronounced floral notes. This vintage has gained complexity and expressiveness, exhibiting powerful character and spice, underpinned by impressive structure and seductive fragrance due to 15% whole-bunch fermentation. The cool climate contributes freshness and finesse, blending aromas of garrigue and fynbos with hints of black olives and dark fruits into a harmonious whole.
Radiating mineral tension and white pepper spice, it’s enriched by luscious blackberries and aromatic herbs, rounded off by a wonderfully invigorating acidity. This expressive and characterful Syrah echoes the great wines of the Northern Rhône, striking a perfect balance between ripe black fruit, delicate pepper notes, and sweet spice. It's just now reaching its peak of development. An exceptional wine!
Die Trauben wurden von Hand in kleine Kisten geerntet und über Nacht in einem Kühlraum gelagert. Vor dem Entrappen erfolgte eine sorgfältige händische Selektion der Trauben. 10 % der Trauben wurden als ganze Trauben belassen, um zusätzliche Komplexität zu erzielen.
Die Gärung setzte auf natürliche Weise ein, mit sanften händischen Untertauchungen der Maische zweimal täglich. Die Gärtemperatur erreichte Spitzenwerte von 28 °C.
Der Wein wurde anschließend in 500-Liter-Fässer aus französischer Eiche überführt, wo die malolaktische Gärung stattfand (14 % neues Holz, der Rest 3., 4. und 5. Belegung).
Während des gesamten Vinifikationsprozesses wurde Rozy’s nachhaltige Anbauphilosophie beibehalten: Es wurden keine Enzyme, keine Reinzuchthefen und kein Schwefel während der Weinbereitung verwendet. Der Wein wurde weder geschönt noch filtriert, mit nur einer minimalen Schwefelzugabe vor der Abfüllung.
