The Cape Doctor is the local name for the strong south-easterly wind that blows from False Bay and continues on to Cape Town. The Journey's End Cape Doctor Bordeaux blend is named after this local wind, which is crucial to the wine's unique character. These vineyard blocks are protected from the strong Cape Doctor wind by a eucalyptus forest and are located only 7 km from the sea, giving the wine a fresh natural acidity and mineral saltiness.
This wine displays fruit on the darker side of the spectrum with cassis and rich fruitcake on the nose, accompanied by cinnamon spice and dark chocolate from generous oak ageing. The concentrated dark berries are complimented by a creamy texture with soft elegant tannins delivering a beautiful long-lasting finish.
Treatment in the cellar
35% Cabernet Sauvignon, 35% Merlot, 10% Cabernet Franc, 10% Malbec, 10% Petit Verdot.
The grapes from each block were harvested and processed separately, using both stainless steel tanks and 5,000-litre barrels with cut tops. Before fermentation, all grapes underwent cold maceration for four days.
After fermentation, the Cabernet Sauvignon underwent secondary fermentation for two weeks to ensure a solid tannin structure before maturing in barrels for 22 months. The Cabernet Sauvignon and Merlot are aged 100% in new French oak barrels, while the other grape varieties are aged in second-fill French oak barrels. Only the best barrels of each grape variety were selected for the final blend.
