The South African venture began after Julien Schaal spent a harvest in the Hemel-en-Aarde Valley and developed a lasting connection with the region. Cooler conditions influenced by the nearby Atlantic Ocean extend the growing season and allow grapes to mature slowly. As a result, the wines often display vibrant acidity, moderate alcohol and clearly defined fruit profiles.
Fruit for the wines is sourced from selected vineyards in Elgin, Overberg and Walker Bay, regions known for their maritime influence and varied soils. Clay-rich Bokkeveld shale and decomposed granite are common geological features that contribute structure and mineral detail to the finished wines. Fermentation and ageing take place in a combination of stainless steel tanks and French oak barrels to preserve freshness while adding texture.
The flagship wine is Mountain Vineyards Chardonnay, produced since the inaugural vintage in 2005 and widely recognised for its balance between fruit purity and subtle oak influence. Another key bottling is Evidence Chardonnay from an older Elgin vineyard planted at higher altitude.
