Named after the 'Kopje' (little hill) where a cannon was fired in the 17th century to alert nearby farmers of incoming ships, Kanonkop symbolizes a rich legacy of trade, where farmers filled their carts with fruit, vegetables, and especially wine for sailors.
Die Trauben für den Kanonkop Kadette stammen von fünf bis 30 Jahre alten Reben. Die Trauben wurden nach der Lese und nach sorgfältiger Auswahl drei bis fünf Tage lang auf der Haut in offenen Gärbottichen unter täglich zweimaligem "Punch Down" fermentiert. Nach Abschluss der Gärung reifte der Wein 12 Monate lang in zweit- und drittbefüllten französischen Nevers-Eichenfässern.
