The Kershaw Clonal Selection Elgin Chardonnay is characterized by its subtle mineral core and a focus on harmony and precision. Aromas of spiced poached pears, apples, and white pepper dominate the bouquet, complemented by fragrant freesia and gardenia, mingling with ripe lemons and mint. This medium-bodied, bone-dry wine showcases exceptional concentration and depth of flavor, making it a quintessential choice for any Chardonnay enthusiast.
Crafted from Dijon clones CY76, CY95, CY96, and CY548 with low yields, developed at the University of Burgundy, Richard Kershaw's acclaimed Elgin Chardonnay is making waves both locally and internationally in the wine world.
The grapes for this premium Chardonnay were hand-picked on an early autumn morning and transported in 10 kg crates, promptly pressed whole upon arrival at the winery. The pressing yield was limited to 590 liters per ton. The juice flowed by gravity directly into barrels without pumps, ensuring minimal handling. The unclarified juice underwent spontaneous fermentation without the addition of enzymes or cultured yeasts, resting for four months in French oak barrels before careful sulphuring and a further seven months of aging. 38% of the barrels used were new, with the remainder being seasoned oak.
