The inspiration for the Kershaw Deconstructed Chardonnays lies in the belief that the Elgin region possesses qualities that elevate it to world-class status. The Kershaw Deconstructed Groenland Bokkeveld Shale CY548 2017 is a strikingly bold wine, exhibiting a delicate note of citrus blossom typical of the Kershaw Chardonnays of this vintage. Its soft, peach-like aromas echo the elegance of Pouilly-Fuissé, underlined by 60% new oak influence and a subtle acidity that adds balance. This wine represents the last release from the distinguished Groenland vineyard, now under new ownership, making it a final tribute to a unique terroir.
The grapes were handpicked early on an autumn morning, placed into small baskets, and directly pressed in the Willmes Sigma 5 press. The juice gently flowed by gravity into barrels without any pumping, remaining unclarified and with no added enzymes or yeast, allowing for spontaneous fermentation. After resting in 228L barrels for four months, it underwent a light sulfur addition and aged for an additional seven months before bottling.
